King Cake Dough

1 1/2 teaspoons active dry yeast

1/3 cup plus 1/2 teaspoon sugar, divided

1/3 cup warm water

1 teaspoon vanilla extract

2 large eggs

1 large egg yolk

3 1/4 cups plain flour

1/2 teaspoons kosher salt

6 Tablespoons unsalted butter, softened

In the bowl of a stand mixer fitted with a dough hook, combine water, yeast, and 1/2 teaspoon sugar. Let stand about 7 minutes or until mixture is foamy. In a small bowl whisk together vanilla, eggs, and egg yolk. Add to test mixture and beat on low speed until combined. With mixer off add flour, salt, and remaining sugar. Beat at medium speed until dry ingredients are moistened. Add butter and beat until combined. Pour dough out onto a lightly floured surface and knead gently four or five times. Spray a large bowl with cooking spray and place dough in bowl. Cover, and let stand in a warm place until doubled in size, approximately one hour.

Line a large baking sheet with parchment paper. Place dough on a lightly floured surface and punch down. Roll dough out into a rectangle. Prepare filling.

8 ounces cream cheese, softened

1/4 cup sugar

1 teaspoon vanilla

2 Tablespoons of beaten egg

Pie filling of your choice

Cover and let rise in a warm place until doubled in size, about 45 minutes.
