Locals especially love adding Mockingbird’s Pumpkin Spice Syrup to their coffee, latte – basically anything from the many offerings off their drink menu. But here’s the really good news: Mockingbird Cafe wants to share with you a recipe to make your very own pumpkin spice syrup. It’s super simple and super delicious. Enjoy!
Mockingbird Cafe’s Pumpkin Spice Syrup
- 1 pumpkin
- 2 cups water
- 2 cinnamon sticks
- 4 cups of sugar
Slice the pumpkin in half and remove seeds and pulp. Lightly coat with olive oil and your favorite spice Cover cut halves in foil and bake at 325 for 45-60 minutes. Let cool and remove pumpkin from the skin and puree till it is smooth.
In a large pot bring the sugar, water, and cinnamon to a boil, then add the puree. Let simmer for 5 minutes. Add syrup to your favorite beverage and top with nutmeg!
