OCEAN SPRINGS, Miss. (WLOX) — Sucre Dolot Bakery is teaming up with the Ocean Springs Chamber of Commerce to give king cake bites to Amtrak passengers traveling to the Peter Anderson festival. The Amtrak Mardi Gras Service is making a special stop for the festival.

Chamber to pass out 150 bites

Meranda Hudson, owner of Sucre Dolot Bakery LLC, said the chamber is getting about 150 individual king cake bites to pass out to people coming off the train.

“It takes a lot of preparation, especially with the huge numbers,” Hudson said. “So this year we’ve teamed up with the Chamber of Commerce in Ocean Springs, and they are getting about 150 of these individual king cake bites. And they’re going to be passing them out to the people coming off the train, which is really, really exciting.”

Hudson said the bites are part of the bakery’s contribution to the art festival.

“It is an art form. So this is my art going out for the art festival. I love to feed people. I’m from Louisiana and it’s just in our core,” Hudson said.

How the bites are made

Hudson said a bakery employee, Justina, spreads the bakery’s small-batch filling on the bites. The same filling goes in the bakery’s cinnamon rolls and king cakes, according to Hudson.

“If you don’t want a whole king cake, these are perfect for on-the-go for families or just having like a few of them to pop in your mouth,” Hudson said.

Hudson said the bakery started making the bites about four years ago.

“They’ve just been so famous and popular since we started them about four years ago,” Hudson said.

After the bites are baked, each one weighs about 6 ounces, Hudson said. The bakery adds a drizzle of homemade buttercream over the top, then adds sprinkles.

Hudson said the bakery is also sending breads, bites and cinnamon rolls to The Shed. Items include pumpkin spice bread, banana nut bread and a few other items, she said.
